In a small mixing bowl, whisk lemon juice and almond milk. Add the cashew butter then whisk in the icing sugar followed by the oat milk. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
Sieve the flour and grate the carrot.
Peel and grate the carrots with the small wholes of a grater.
In a separate bowl, whisk together the applesauce, almond milk, vanilla, sugar and oil. Stir the dry mixture into the wet mixture. Add to a high-speed blender along with coconut cream, lemon juice, maple syrup, and vanilla and blend on high until very creamy and smooth scraping side as needed.
